Tine for some home cooking!

First , You Make a Roux                   

A basic recipe-

2 tablespoon of butter,shortening or bacon fat
2 tablespoon - flour

-Melt fat in a skillet. Add flour and stir constantly over low heat until the color you need.

Small game - hunting  season started this weekend. This is for you.

Squirrel  Gumbo

3 to 4 cleaned squirrels
1 chicken
1 large onion /chopped
2 cups chopped bell pepper
2 cups chopped celery
1 quart stewed tomatoes
1 small can tomato sauce
2 cups canned okra
3 tablespoon creole gumbo  file
3/4 cup dark roux

   In a pressure cooker cook-squirrels and chicken. Take meat off bone.. Save broth. To broth add vegetables- cook till tender. Make roux and stir into mixture. Cook until tender. Add meat and okra. Season to taste. Simmer for 15 minutes. Add file just before serving. Serve over rice.

Review- An exciting book with lots of ups and downs. One hot cop and one motorcycle riding hot chick with ties to a serial killer. Is the serial killer really dead or a copy cat is out there. When all the clue come together who will it point to.  Can't wait to read the next book.
